Chef: Zlatko Poljak
Nationality: Croatian
Languages: English

After formal education and training in Culinary High School, Zlatko immediately started to collect working experience in restaurants along Dalmatian coast during the touristic season. Highly motivated by nature, he was not eager to spent his winters at home, so he took challenging opportunity to work as a chef on a merchant vessel, where he had to combine and work with limited supplies and deliver diverse and high-quality menus.
Back in 2006 Zlatko started his career as a chef on a luxury charter yacht, recommended by his High School professor. Since then, even he would work during winter in restaurants, Zlatko was back on charter yacht every season. Once introduced to work in a galley of a charter yacht, Zlatko recognized immeasurable satisfaction of cooking for a smaller group of guests without limitations of set-up menus, knowing his guests’ food preferences and dietary restrictions in advance, being able to develop personalized meal plans for each group, encouraged to explore and combine different cuisines. It is completely justified to say that being chef on a charter yacht is Zlatko’s identification.
Over past 13 years, in Croatian yacht charter industry Zlatko has become a synonym for a specialized master chef, a complete and detailed connoisseur not only because of his superb cooking and plate presentation, but also of the “life on the yacht” hacks that only highly interested and devoted chef would notice and implement in his work. Zlatko knows his guests appetite charts – when is the right time to offer lighter meals, when is the moment to reduce the portions, comparing to the desert you had in previous meal Zlatko sets approvable amount of sugar for your next desert, all the time having in mind different preferences of all members of the group.
Zlatko says he needs only 3 ingredients for his gastro-creations; Fresh, Local, & Healthy. He will take you to journey thru any cuisine you prefer or request, but knowing him for years – here is recommendation: give him guidelines and let him create your gourmet experience. Charter on Navilux with Zlatko as chef is truly an experience you don’t want to limit in any way.
Organized, hands on, experienced as a seaman (more than once he has been offered to take position of the captain of the yacht), cheerful and heart of the team, Zlatko easily made decision to join Navilux, as he is well introduced with the yacht and the crew.
Zlatko obtained all levels and titles of specialized education for chefs available in Croatia: Master chef program finished Cum Laude in 2011 at School for tourism and hospitality Split, four years later (2015) earned Master chef title by Croatian Chamber of Trades and Arts Split.
Beside cooking and exploring what’s new in the world of pots and pans, Zlatko is passionate about the cars, skilled car mechanic, licensed truck driver as well, loves to play football (five-a-side) with his friends. Zlatko and his wife will take any opportunity to travel – both passionate about broadening horizons and romantic escapes, all well-deserved, as they are devoted parents of three children.
