From childhood, Maximilien showed a keen interest in electronics and the mechanics of things, which naturally led to studies in engineering. Being a perfectionist, Maximilien joined the yachting industry as this enabled his eye for detail and meticulous work ethic to be fully utilised and put to good use. His first position was on board a Pershing 82 as First Mate and Engineer and it was the confirmation that Maximilien needed that this was the career he wished to pursue. With extensive cruising experience in the Mediterranean, Maximilien is able to tailor his guests’ itinerary to create the perfect vacation. His favourite cruising areas include the coasts of Corsica and Sardinia as well as the South of France. A particular cherished destination is a beach West of St Tropez with waters so clear it is reminiscent of the Bahamas!

Using fresh and local produce, Sebastien carefully combines ingredients that work in harmony and allow each flavour to shine through. Being from a classically trained background, he has mastered French cuisine and enjoys creating traditional dishes with a contemporary twist. Sebastien spent several years working as a VIP chef in Los Angeles before joining the yachting industry. It was during his time in LA that Sebastien learnt new skills and an understanding of different cuisines, from international haute-cuisine to health-centric as well as specific dietary requirements.
